vegan coconut whip

I'm by no means a brilliant cook, nor a vegan, but I do like to experiment with recipes and this is as simple as they come.



I needed to chill a can of coconut cream, upsidedown in the fridge overnight. (Or if you're like me, for several days because you forgot that you put it in there.) It made it easier to separate out the coconut liquids and the solids; you only need the solids for this and you can make a fantastic smoothie out of the coconut water.


I only used a dessert spoon and a half of sieved icing sugar and the coconut cream in a large stand mixer and whipped them together to combine. Depending on how sweet or not you actually like your coconut whip, you can add more or less. I added more because this particular cream wasn't as solid, which made the whip sweeter. 


Seriously, it's as easy as that. Two ingredients to make something delicious!
